Pan Bati (Aruban Flat Bread)
Ingredients:
2 cups flour
1 cup corn flour
2 tbs. baking powder
1 egg
pinch of salt
sugar to taste
1 3/4 cups of Milk
1 tsp. vanilla
Preparations:
In a mixing bowl, mix the flour, corn flour, baking powder, salt and sugar.
Add the egg, milk and vanilla to the dry mix.
Batter the mixture for 10 to 15 minutes or until mixture is smooth (like pancake mix) If the consistency is too thick, add a little water and mix for an additional 2 minutes.
Lightly spray a non-stick pan with a cooking spray (PAM) and let pan heat up a little. Just like you do with pancakes, add the batter to the pan (+ 1 minute on each side -or- until golden brown.
Pan bati is great with soup, stew or just by itself with some Gouda Cheese on it, specially when it is hot.
